A little way away from Uptown Waterloo (inside the Delta hotel to be exact) is Proof Kitchen and Lounge. It's a nice, cozy little restaurant that uses many local produce in their dishes.
For appetizers, we ordered The Nosh to share. The naan was warm and soft and I especially liked the whipped ricotta with lemon for the light and refreshing taste. I would recommend trying the ricotta first and then the oven dried tomato hummus since the hummus has a stronger taste than the ricotta.
I ordered their Fish + Chips- featuring a Lake Erie pickerel in a Barrel Proof batter with coleslaw and hand cut fries. I'm always nervous that the fish would be overcooked but thankfully, this wasn't although the fries were a little soggy.
My friend ordered the Apple Cider Brined Chicken Supreme. The purée was so tasty! I was surprised they used star anise (which is typical in Asian cuisine) and nutmeg to make the purée but the effect was so good!
The food here is very good and their dining area is perfect for a nice chat or an evening drink in the lounge. I would definitely recommend this place if you're looking for perfectly crafted dishes at a reasonable price.
